Nooodle Salad

This is one of the very first recipes I’ve ever tried from a blog, when it was on the old, old, old, Confessions of a Pioneer Woman, before Ree Drummond was a Food Network star. It is not authentically Asian, but it’s a crowd pleaser. You can sub parsley in for cilantro if it suits you. Try Ree's Asian Noodle Salad.

PS, I use Pad Thai style rice noodles when I make it. I’ve added shredded chicken or tofu cubes as well.
