We’ve all seen the Insta-famous oven roasted sheetpans of slightly charred ingredients blended into a “rustic” tomato soup. I’ve been making those, too.
Well this is better. This tomato soup recipe from Lisa of Downshiftology is easier, tastier, and you won’t need to heat up your entire kitchen with the oven this spring to make it.
Good tomatoes are important. San Marzanos, or at least tomatoes from Italy, are best. I used the Whole Italian Tomatoes with Basil from Trader Joes. This is no time to reach for the Amazon Fresh brand.
