Make some coleslaw

Meet my old friend, Stephanie Manley from CopyKat Recipes, doing her thing. Stephanie is a food publishing powerhouse—she ran one of the original online cooking communities, published cookbooks, and continues to make YT vids. She is the queen of reproducing chain restaurant recipes, and comfort food cooking.

This coleslaw recipe was originally posted in her community about 25 years ago, and I still refer to it on her blog. The only change I make is to use Hellmann’s instead of Miracle Whip, and less of it. She mentions bell pepper being optional but for me it is necesary. This mayo-based recipe, Better than KFC Coleslaw, is what I serve to company or take to potlucks and barbeques. People come back for seconds.
