You know that super sweet, pumpkin pie-tasting butternut squash soup from Panera? This isn't that. I tried this one-pot, onion-y version that's all about the savory, and will make it on repeat.

I swapped in chicken base with water instead of broth, as I do for most hearty soups and stews (it’s delicious and more convenient to store). And added a drizzle of roasted walnut oil on top.
